- Preheat the oven to 350°F. Coat a large rimmed baking sheet with cooking spray.
- Heat the oil in a large nonstick skillet over medium-high. Add the ginger and garlic; cook, stirring, until fragrant, 15 seconds. Add the onion and bell pepper; cook, stirring occasionally, until slightly softened, 3-4 minutes. Transfer to a large bowl and add the beef, peanut flour, egg, 1 tablespoon of the sriracha and 2 tablespoons of the ketchup; mix well. Transfer the mixture to the prepared baking sheet and form into a 9 x 4 x 2-inch loaf. Combine the remaining (4 tablespoons plus 1 teaspoon) sriracha and 2 tablespoons ketchup in a bowl. Spread the mixture over the top of the meatloaf.
- Bake the meatloaf until a thermometer inserted into the center registers 165°F. Remove from the oven and let cool 10 minutes before slicing.
