Peanutty Chicken Salad Pita Pocket

  • 3 cups diced, cooked chicken
  • 2 celery stalks, sliced
  • 4 green onions, minced
  • 1/2 cup halved, seedless grapes
  • 1/2 cup dry-roasted peanuts
  • 3/4 cup mayonnaise
  • 3 Tbls. Major Grey’s chutney
  • 1/2 tsp. curry powder
  • salt and pepper to taste
  • lettuce leaves, washed and dried
  • 4 pita breads, halved

In a large bowl, combine chicken, celery, green onions, grapes and peanuts. In a small bowl, combine mayonnaise, chutney, curry powder, salt and pepper. Stir dressing into chicken mixture. Chill thoroughly before serving with lettuce leaves in halved pita bread pockets.

Makes 4 servings.
