Peanut Ambrosia Salad

  • 1 11oz. can mandarin oranges, drained
  • 1 cup pineapple tidbits, drained
  • 3 bananas, sliced
  • 1 cup sour cream
  • 1 Tbsp. mayonnaise
  • 1 cup flaked sweetened coconut
  • 1 cup miniature marshmallows
  • 1 cup unsalted peanuts
  • 1/2 cup halved Maraschino cherries, for garnish, if desired

Peanut Ambrosia Salad
In large bowl, combine fruits. In small bowl, combine sour cream and mayonnaise. Fold into fruit. Add coconut, marshmallows and peanuts. Garnish with cherries. Refrigerate any leftover.

Yield: Serves 6 to 8
