Marinade:
- 1/3 cup soy sauce
- 1/3 cup pineapple juice
- 3 Tbsp. honey
- 3 Tbsp. ketchup
- 1 tsp. Dijon mustard
- 3 Tbsp. brown sugar
- 3 garlic cloves chopped
- 2 Tbsp. peanut butter
- 1 Tbsp. plains peanuts chopped fine
- 1/2 tsp. chopped cilantro
- Pinch of salt & pepper
Nutty Filet All the Way
Add all above ingredients into a saucepan and stir slowly as mixture reaches a boil. Cook and remove 1/4 cup and set aside.
For Filets:
- 4 Filet mignon steaks, 1 1/2 inches thick
Place steaks into a large plastic bag, and pour marinade over steaks. Seal and allow to sit for 30 to 40 minutes.
Prepare garnish:
- Romaine lettuce
- 1 red onion cut into circles
- 3 tbsp. chopped plains peanuts
Arrange lettuce onto a platter in a decorative way. Set aside.
Remove steaks from marinade and place filets onto a broiler pan. Broil 12 to 15 minutes, basting with reserved marinade.
Arrange steaks on platter on top of lettuce. Sprinkle with peanuts and garnish with purple onion.
Yield: Serves 4
