Edamame Peanut Rice Bowl

Yield: 1 Serving
Edamame and Peanut Butter Rice Bowl

  • ¼ cup brown rice (cooked)
  • ½ cup cooked edamame
  • ¼ cup shredded red cabbage
  • ¼ cup shredded carrots
  • 1 sliced scallion
  • 1 Tbsp chopped cilantro drizzled
  • 1 Tbsp peanut butter
  • 1 Tbsp light coconut milk
  • 1 Tbsp light soy sauce
  • 2 tsp lime juice
  • 1 tsp brown sugar

Method

  1. Combine brown rice, edamame, red cabbage, carrots, scallion, cilantro, peanut butter, light coconut milk, light soy sauce and lime juice.
